Just came across this article about a QB that committed to UNT. One of those kids that was incredible in HS, but didn't get highly recruited for whatever reason. I'm not sure how it will translate to D1, but he throws a nice ball, and seems to do a good job of hitting his receivers in stride. 3 or 4 inches taller, and he may have had a lot of offers.
